Almond Crusted Chicken Nuggets

Ingredients

  • 2 lb chicken breast
  • 1/2 cup blanched almond flour
  • 1/2 tsp garlic powder
  • 1/2 tsp dried basil
  • 1/4 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp dried oregano

Instructions

  • Cut chicken into 1-2 inch cubes.
  • In a medium sized bowl, combine almond flour and all seasonings.
  • Coat each piece of chicken with the almond flour mixture on all sides, gently shaking off any excess.
  • Bring cast iron skillet to medium-high heat, then add olive oil or vegetable oil. Make sure your entire pan is well greased.
  • One by one, place the nuggets on the hot pan. You don't want to overcrowd the pan, so you will need to cook the nuggets in batches.
  • Flip chicken only once the bottom sides have a nice golden color to them. The cook time will be about 4 minutes on each side, but this will depend on the thickness of your nuggets.
  • Once your nuggets are cooked through, move from the pan onto a paper towel-lined plate. The paper towel will soak up excess oil, keeping the nuggets from getting soggy.

Helpful Hint

  • Since you will be cooking the nuggets in batches, make sure you keep the pan well-greased throughout the entire cooking process.

You can bake instead, if that's what you prefer!

  • Preheat oven to 400°.
  • Line baking sheet with aluminum foil, and spray lightly with cooking spray.
  • Place coated chicken on lined baking sheet and bake for 20 minutes (flipping halfway through) or until internal temperature reaches 165°.
