Cut chicken into 1-2 inch cubes.
In a medium sized bowl, combine almond flour and all seasonings. Coat each piece of chicken with the almond flour mixture on all sides, gently shaking off any excess.
Bring cast iron skillet to medium-high heat, then add olive oil or vegetable oil. Make sure your entire pan is well greased.
One by one, place the nuggets on the hot pan. You don't want to overcrowd the pan, so you will need to cook the nuggets in batches.
Flip chicken only once the bottom sides have a nice golden color to them. The cook time will be about 4 minutes on each side, but this will depend on the thickness of your nuggets.
Once your nuggets are cooked through, move from the pan onto a paper towel-lined plate. The paper towel will soak up excess oil, keeping the nuggets from getting soggy.
