Starting at a low speed, whisk ingredients together, slowly increasing to high speed until the mixture reaches a loose whipped cream consistency (medium-stiff peaks).
Chop pistachios, then fold into your mixture.
Combine the honey and sea salt, then gently fold into the mixture.
Pour the mixture into a large tupperware container and place in the freezer to set for at least 7 hours before serving (preferably leave in the freezer overnight). OPTIONAL: Drizzle some additional salted honey over the mixture before placing in the freezer to set.
