Salted Honey Pistachio Ice Cream

  • Stand mixer (or handheld mixer)

Ingredients

  • 14 oz sweetened condensed milk
  • 2 1/2 cups heavy whipping cream
  • 1 cup pistachios (shells removed)
  • 1 tsp cinnamon
  • 1 1/4 tsp almond extract
  • 1/4 cup honey
  • 1/2 tsp coarse sea salt

Instructions

  • Using the whisk attachment on your stand mixer, add the sweetened condensed milk, heavy whipping cream, cinnamon, and almond extract to your mixing bowl.
  • Starting at a low speed, whisk ingredients together, slowly increasing to high speed until the mixture reaches a loose whipped cream consistency (medium-stiff peaks).
  • Chop pistachios, then fold into your mixture.
  • Combine the honey and sea salt, then gently fold into the mixture.
  • Pour the mixture into a large tupperware container and place in the freezer to set for at least 7 hours before serving (preferably leave in the freezer overnight). OPTIONAL: Drizzle some additional salted honey over the mixture before placing in the freezer to set.
