Gluten Free Oreo Rice Crispy Treats

Say hello to the even better version of your childhood favorite! Rice crispy treats are such a nostalgic dessert and I couldn’t wait to give them this fun twist by adding gluten free Oreos!

One of my favorite parts about this treat, besides the nostalgia is the pockets of marshmallow-y bites you get from stirring in an additional cup of marshmallows once you’ve taken the mixture off the heat. What more could you ask for?!

Gluten Free Oreo Rice Crispy Treats

Ingredients

  • 10 oz bag mini marshmallows

    (plus an additional heaping cup)

  • 5 cups gluten free rice crispy cereal
  • 1 cup roughly chopped gluten free Oreos

    (plus 2 crushed cookies to top the bars)

  • 6 tbsp unsalted butter
  • 1/2 tsp vanilla extract
  • 1 pinch salt

Instructions

  • Line 8×8 square pan with wax paper.
  • In a large pot, add butter and pinch of salt, then set to medium heat.
  • Once butter is completely melted, add 10 oz bag of marshmallows and vanilla extract. Stir until marshmallows are melted.
  • Turn off heat, then add rice crispy cereal, crushed Oreos, and additional marshmallows and mix until well combined.
  • Pour mixture into lined baking dish, then press down with your hands. Top with additional crushed Oreos and gently press into the mixture.
  • Once the mixture has cooled completely and is set, cut into squares and enjoy!
