Orange Chocolate Chip Muffins

Orange and chocolate are a match made in heaven, and I’m going to assume you agree if you’re considering making these yummy muffins! These gluten free muffins (easily made non-gluten free as well) have a bright citrus flavor, packed with just the right amount of melty chocolate chunks and are, dare I say it, SO MOIST.

These orange chocolate chip muffins are made with a blend of gluten free all purpose flour and almond flour. Like I mentioned before, you can easily swap the gluten free flour with traditional all purpose flour. I LOVE baking with almond flour. It gives baked goods such a yummy, crumbly texture. Plus, it makes me feel like I’m making healthy choices 😉

Orange Chocolate Chip Muffins

Cook Time 25 minutes
Servings 12 muffins

Ingredients

  • 1 cup gluten free all purpose flour
  • 1 cup almond flour
  • 1/2 cup sugar
  • 1 1/4 tsp baking powder
  • 3/4 tsp ground ginger
  • 1/4 tsp salt
  • Zest of 1 orange
  • Juice of half an orange
  • 2 eggs
  • 1 cup unsweetened almond milk (or milk of your choice)
  • 1/4 cup vegetable oil
  • 1 tsp orange extract
  • 1/2 cup semisweet chocolate chips

Instructions

  • Preheat oven to 350°.
  • Grease muffin pan.
  • In a mixing bowl, whisk together all dry ingredients, minus the chocolate chips.
  • Next, add all wet ingredients and mix until batter is well combined. Then, fold in chocolate chips.
  • Evenly pour batter into the 12 greased cavities of the muffin pan. An ice cream scoop works great for evenly measuring your batter!
  • Bake for 25 minutes.
  • Once completely cooled, store in air tight container.
