Strawberry Banana Bread

A perfect delicious, cakey bread that is perfect for dessert or breakfast! There’s even a recipe for an easy “yogurt frosting.” Yum!

Strawberry Banana Bread (Gluten Free)

Ingredients

  • 1 1/2 cup flour (gluten free)
  • 3 ripe bananas
  • 1 egg
  • 2 tbsp coconut sugar
  • 1 tbsp cinnamon
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp nutmeg
  • 1 pinch of salt
  • 1 cup chopped strawberries

Healthy Yogurt Topping

  • 1/2 cup plain whole milk Greek yogurt
  • 1/2 cup finely diced strawberries
  • 2 tbsp honey

Instructions

  • Preheat oven to 350° and grease an 8×8 baking pan.
  • Pulse all ingredients in food processor, EXCEPT your strawberries.
  • Once the ingredients have formed a smooth batter, fold in strawberries.
  • Pour batter into baking pan and bake for 26-28 minutes, until cooked through.

Healthy Yogurt Topping

  • Mix together all yogurt topping ingredients and top individual bread squares as you are ready to serve.
